Tasting Note

Clear, pale lemon in colour with a fresh, perfume of white flowers, apple and citrus fruit. On the palate, it is minerally with vegetal notes and lifted lemon zest on the finish. This 100% Garganega has enough body to stand up to food while retaining a crisp, fresh quality.

II Cavallino di Sauro Maule started in 2011 in the hills of San Germano dei Berici. In a 4 ha vineyard, Sauro gets help from his father and wife. Since the beginning of this new journey, Sauro’s philosophy is simple: grow grapes without any chemicals, hand pick them and produce the wine unfiltered.

Vinification

The grapes were hand harvested in 10 kg boxes, crushed and chilled with no sulphur addition. The juice was naturally settled and fermentation took place at 12-15°C. It remained on its less in a stainless steel tank for 7 months before bottling and aged for 1 year in the bottle before release.
